Apple Cake
ingredients
3/4 cup sugar
2 chia eggs (2 tbsp chia seeds, 5 tbsp water)
1 cup flour
1 tsp baking soda
1 tbsp melted butter
1 tbsp canola oil
1/2 cup walnuts
3 apples, peeled and chopped
1/2 package Follow Your Heart cream cheese, room temp
1/2 cup powdered sugar
1 tbsp butter, room temp
1 tsp vanilla extract
instructions
Preheat the oven to 450 degrees. Grease a baking pan, we used a 9x9 square pan.
Add chia seeds and water to a glass or small bowl, stir and let sit for 10 minutes. Add sugar, chia eggs, oil and melted butter to a bowl and mix. Add flour and baking soda in a separate bowl and mix, then add to the rest of the ingredients. Fold in apples and walnuts. Bake for 30 minutes then remove from the oven and let cool completely. Add cream cheese, butter, sugar and vanilla extract to a bowl and beat until combined. Spread onto the cake.
